Chocolate Yogurt Cheesecake

Light, fruity, happy. Perfect for hot summer days or if a simple cheesecake is not what you are looking for. It is a light combination of cheesecake and yogurt with cherries to add some fruity flavor in to it. You can also use some other fruits like mandarins, peaches or any kind of berries. It is really very easy.
First of all, you need the chocolate base. You find the easy recipe for it here.

1. Dissolve 4 teaspoons of gelatin powder in half a cup of hot water and put aside to cool down. Then, get the cherries out of the glass into a sieve to remove the juice.

2. Now we need (all ingredients need to be cold straight out of the fridge):
500g cottage cheese
500g creamy Greek yogurt
200g raw sugar
juice from 1 lemon
Combine it with a blender to get a creamy smooth texture. Add the cool gelatin fluid and blend together. Depends on your room temperature and how cold were your ingredients, either your cheese mixture is already starting to set and you are ready to put the cake together, or you put it into a fridge to start the setting process before you go proceed. That’s pretty much it. Now put the cake together: 1. the sponge, 2. then a half of the cheese mixture, 3. the fruits, 4. the remaining cheese. Leave it in a fridge for at least 3 hours before serving. Grate some dark chocolate on top before serving. Enjoy!

Wholemeal Chocolate Sponge Cake

Wholemeal chocolate sponge cake recipe. Easy and very quick. I’m pretty sure you will love it! I use it for many cake combinations as a base so every time I just include the link here to my other recipes every time I use it.

Prepare:

4 large eggs, divided into egg whites and egg yolks
80 grams raw sugar
some vanilla
100 grams wholemeal
30 gram cacao powder
1 teaspoon of baking powder
one pinch salt

Turn on your oven on 175 degrees Celsius.

Beat the egg whites and salt till stiff. Add slowly raw sugar and vanilla while still beating on high speed till combined properly. Slow down the food processor or mixer, add the egg yolks and combine for just 3-4 second. Mix
baking powder and cacao with wholemeal and add to the egg white mix. Stir gently till combined. Done! Don’t forget the baking paper before you pour the mix into the tray :)

Bake about 14-18 minutes.

Take the pastry out of the freezer, grade the half of it onto baking tray (don’t forget the baking paper). Distribute the apples on top, then the egg-whites. Now grate the remaining pastry on top. Put into the hot oven on 180 degrees Celsius until ready (dark-gold colour).

How To Prepare Meat For Smoking

This is the traditional and the best way of preparing meat for smoking. No chemicals, no special pickling salt. You only need the regular salt and garlic. That’s it! Tasty can be healthy!
Ingredients:

  • meat: pork belly
  • 500g or more table salte
  • 1 or more garlic bulb
  • Clean the meat
  • Crush lots of garlic and mix it with plenty of salt. We used here one large garlic bulb.
  • Rub in and cover the meat with the salt garlic mix
  • Cover with a clean towel and keep in a fridge for 4 days. Check everyday and remove the excess water if there is any
  • After 4 days (3 nights), wash the meat under very warm, nearly hot water fro few minutes.
  • Dry with a clean towel, put a cotton string through and leave over night in a fridge.
  • The next morning, the meat is ready for smoking!

TIPS:

  • 4 days means for me 3 nights in the fridge :) just to avoid any mistakes plus one additional night in the fridge after washing and drying the meat
  •  smoking time depends on how thick your meat is, we usually smoke between 5-7 hours,
  • the smoking temperature is between 45-55°C
  • you have to keep your eyes on the wood smoker pretty much the whole time so the best is you just declare that day as a smoking day, have a beer and enjoy the smoking! :)

How To Build A Smokehouse

Yes, our smokehouse is ready and I love it. It works great! I will tell you more about our first smoked products in my next post. Here is the video how to build a smokehouse or how we did it and the finished product.
Tips:
  • If you want to build a smokehouse using timber, it is VERY VERY important to use NOT treated timber. You don’t want to have the poison in your meat later…
  • the smoke goes up, thats simple physic so make sure your channel outlet is not too low (we did the mistake at first and had to re-do the channel, watch the video and you will know what I mean
  • The channel level needs to go up toward the chamber
